What’s Cooking?! Italian Chicken Pockets


Easy clean up tonight! Steaming a low-fat meat, like chicken breast, in aluminum foil in the oven helps avoid added fat and keeps the meat tender. Make little “pockets” with your favorite veggies and low-fat meats for an easy, fast meal without all the dishes!

Italian Chicken Pocket:
1 lb boneless skinless chicken breast
4 cups frozen broccoli
2 Roma tomatoes-diced
Italian salad dressing

Preheat oven to 450 degrees farenheit. Place each chicken breast on an individual piece of aluminum foil. Cover each piece with broccoli and tomatoes and coat with italian dressing. Fold the foil together to seal each chicken breast into a “pocket” for steaming. Bake for 45 mins or until chicken reaches 165 degrees farenheit.

The pocket contains your protein and non-starchy veggies, so all you have left is the starch! We chose Couscous tonight, but brown rice or a baked potato or sweet potato would pair nicely, as well. Remember your portions: 1/4 of your plate will be chicken, 1/2 non starchy veggies, and 1/4 starch. Enjoy!
