What’s cooking?! Buffalo Chicken Salad

Take a look at what’s cooking in my kitchen each week! What’s on the menu tonight?

Buffalo chicken salad
– Boneless skinless chicken breasts
– Your favorite “wing sauce” (try low-sodium for heart heathy eating!)
– 1 egg
– Whole wheat flour

Preheat oven to 450 degrees Farenheit
Trim fat from chicken breasts
Tenderize chicken breasts with meat mallet
Crack and whisk egg in a bowl, fill a separate bowl with whole wheat flour, and one more with hot sauce
Dredge chicken breasts in egg, then flour, then hot sauce
Place chicken in a baking dish and cook for about 20 minutes until meat reaches 165 degrees farenheit

While chicken is cooking, prepare your salad with your favorite veggies! What did we use?
– Lettuce
– Tomato
– Red onion
– Celery
– Carrots
– Feta Cheese
Many people like blue cheese dressing with this salad; but, be careful because this can pack in a lot of Calories and fat! Consider using real blue cheese instead of a dressing, since the cheese has such a strong flavor. I HATE blue cheese, so we opted for feta with balsamic vinegar and a light olive oil drizzle. ENJOY! 🙂
